What is the best clarification agent to use for a vegan consommé?

Answer: A- Agar Agar works much like gelatin and can be used to clarify a vegetable stock and create a mouthfeel very similar to that of traditional consommé. Although a raft with just egg white and mirepoix works well, the end result would not be vegan, and because of this fact a lot of chefs choose not to use the raft method on vegetarian/vegan consommés.
