Baked Alaska is believed to have originated at New York City's Delmonico's restaurant to commemorate the purchase of Alaska in 1867, has become popular with its eye-catching presentation and name. Baked Alaska is typically ice-cream cake enveloped within an igloo of meringue. The entire dessert is then placed in an extremely hot oven for a brief time, long enough to firm and caramelize the meringue but not long enough to begin melting the ice cream, creating a wonderful contrast of texture and temperature.
