Answer: C - Grade C eggs make up less than 5 per cent of the eggs sold in Canada and are only used in industrial processing facilities. It is illegal to sell them or use them in restaurants. Grade A eggs are the eggs most often seen, they’re sold in supermarkets and used in their whole form in professional kitchens (poaching, frying, etc).
According to the Egg Farmers of Alberta, Grade C eggs have a cracked and/or stained shell, a flattened yolk, or a watery white. These eggs are only used in the production of processed egg products.
