What are the steps to correct a poorly clarified consommé?
  1. Do a secondary clarification by building another raft. Strain carefully and cool.
  2. Add egg whites to chilled, degreased consommé. Bring the consommé to a simmer, stirring until the egg whites begin to coagulate. Strain consommé and cool.
  3. Bring consommé to a simmer and then add egg whites. Carefully stir until the eggs coagulate. Strain and cool.
  4. Consommé cannot be clarified twice.
